Soba noodle salad in the style of Marilu

Several years ago, I read the book Total Health Makeover by Marilu Henner. When I had the chance to interview her in advance of the Tampa Bay Food and Wine Festival, I started thinking about her book again. Her demo brought back memories of some of her great recipes. I don’t have the actual recipe, but I watched her demo pretty closely and this is a take on her soba noodle salad. It’s a great summer dish, happens to be pretty healthy and you don’t feel like you are missing anything. The tahini/sesame oil make it really nutty and according to Marilu, is better for you than the usual peanut sauce. This is a spicy dish! Lower the amount of chili oil if you are not keen on spicy food.

Red miso soup with silken tofu and wild mushrooms

This is a great recipe for after the weekend when you may have indulged in eating a little too much. I like to make lighter soups and meals on Mondays sometimes. You can buy the miso paste at Rollin’ Oats or Whole Foods. Try not to boil it or you will kill all the good enzymes in the soup.

My tasty faux pho

Pho is a Vietnamese soup eaten for breakfast, lunch or dinner. There are many different types of pho. This one would be considered a Pho Bo if it were cooked in the traditional way, which takes many hours. This is a quick version; my faux pho. Confession: The stock was so good after eating the food in it, I drank the rest! Take out the star anise before you serve it.
